SHETLAND CATCH IN THE PICKLE
SHETLAND Catch Ltd has just added another string to its pelagic bow by moving into marinated herring production. Although the project was kept well under wraps until an official launch at the Bremen seafood show last month, the appearance of ten large storage tanks outside the companys Gremista factory was a clue there was something new in the pipeline. The tanks will store the large amounts of vinegar and brine required for the operation and a purpose built processing line has been accommodated in the factory to complete the development.
Poor prices for frozen herring on the German market over recent years has prompted this latest diversification. "Providing primary marinades for your end products" was the advertising slogan launched at Bremen and production will focus on bulk marinated product for the German, Polish and Dutch processing markets.
Another well kept secret was the appointment of German marinating expert Otto Badzong to oversee the operation. With a lifetimes experience in the production of marinated products, Mr Badzongs most recent post was with a major Scottish pelagic processor where he built up marinated production from scratch to 2,500 tonnes in just three years. At Shetland Catch, Mr Badzong will be responsible for all stages of the operation from production and quality control through to sales of the product.
Work on the new marinating equipment and processing line is nearing completion and Shetland Catch expects production to begin around mid-July.
