QUICK AND EASY FISH WITH THE SEAFISH KITCHEN
THE Edinburgh-based Seafish Kitchen visited Shetland last month as part of its annual summer UK tour to promote seafood cookery. In two days of demonstrations at the NHS 50th Anniversary Health Fair at the Clickimin Centre, the Seafish Kitchen provided visitors with plenty of inspiration for new and exciting fish recipes.
With the emphasis on speed and ease of preparation, some delicious concoctions were prepared using fresh Shetland seafood. Onlookers were given the chance to taste the recipes, which included fish balti, ham and sole supper and smoked mackerel pate all of which are included in the free Seafish leaflet, "Quick Fish Dishes".
And its not necessarily just youre taste buds which will be tickled if you decide to try out some of the recipe ideas for yourself the Seafish Kitchen were also promoting the nutritional and health benefits of making fish a regular part of your diet. In particular, the link between a healthy heart and eating oily fish such as mackerel and herring, which are rich in valuable omega-3s.
During her cookery demonstration, food nutritionist Yvonne Coull encouraged cooks to be a little experimental. "Remember fish is interchangable and you can usually substitute different kinds of fish in the same recipe. This way you can make the best of seasonal availability and best buys offered by your fishmonger.
NHS projects officer Nina Goodlad, who organised the Kitchens visit, said she was extremely pleased with the way the entire event had gone. "A lot of people have attended the Fair over the last two days and it seems the Seafish Kitchen has been a particular success."
