Chutneys, Pickles and Relishes
Mango Chutney
Recipe
- 1 teaspoon peanut or canola oil
 - 1/2 red onion, diced
 - 1 tablespoon fresh ginger, minced
 - 1 Granny Smith apple, peeled, cored and diced
 - 1 mango, peeled, seeded and diced
 - 1/4 cup sugar
 - 1/4 cup cider vinegar
 - 1/4 cup raisins
 
Method
- Sauté onion and ginger in the oil
 - Add the diced apple and let it pick up some color.
 - Add the mango, sugar, vinegar and raisins, then bring to a boil.
 - Reduce the heat and simmer for 5-10 minutes.
 - Let cool.
