These recipes do include spice mixtures (masalas) which Bryan prepares himself from freshly ground spices,

Doi Maach
As before, used 30ml of the onion oil,
and heated a little spice mix in this (similar to spices in any doi maach)
Cooked on medium heat for one minute, then added 125ml of the
veg. stock.
Added half a small tub (about 75g) of low fat yoghurt, and cooked for a
minute.
Put raw white fish (I used cod) into sauce, and cooked for 3.5 minutes a
side, spooning over the sauce as it cooked.
I was not having rice, so decided to add half a tin (120g added) of organic
green lentils. Just a little plain yoghurt as side dish.
Wazza's Comments
Result: very good, but could have had more depth to the flavour, but I used
ground spices where I would usually use fresh ground, (similar difference
with coffee!)
