Masala Tea
Ingredients
(8 servings)
- 1 pint Cold Water
- 5 fl ozs. Milk (or to taste)
- 1 3" stick Cinnamon
- 6 Green Cardamoms, whole
- 4 Cloves, whole
- 12 Black Peppercorn (optional)
- 12 tsp Sugar (or to taste)
- 6 heaped tsp loose tea OR 9 tea bags (a good quality tea should be used)
Method
- Combine water and milk in a deep pan, and bring to a boil.
- Add the spices and sugar. Stir to blend, and turn off the heat.
- Cover the pan, and let the spices infuse for at least 10 minutes.
- Add the tea leaves or tea bags, and bring the
water back to boil.
- Reduce heat and simmer, covered, for 5 minutes.
- Check the colour and taste, adjusting milk and sugar if required.
- Strain the tea into a warm teapot, and serve immediately.
(This can be made without milk and sugar - adjust the dry ingredients to taste.)
