Recipes for People with Diabetes

Chicken Tikka Kebabs

I thought that I'd put some recipes on here. As I am diabetic (a very sweet person :-) ) the recipes tend to be lower in fat (even though I'm only a skinny runt, low-fat is the rules :-( ) and sugar. Here's one for Chicken Tikka kebabs.
Makes for 4 (or usually 2 in my servings!).

Recipe

Method

  1. Remove any skin from the chicken, and cube.
  2. Put the yoghurt, ginger, chilli, coriander, lemon juice oil, garlic and salt into a bowl and mix well.
  3. Stir in the chicken so the chicken is covered, and put in the refrigerator to marinate overnight.
  4. Stick the chicken cubes onto skewers and place under the grill for about 10 minutes or so until cooked through.
  5. I ususally serve it with boiled basmati rice and a mint sauce, made by finely chopping mint leaves, stirring them into more low-fat natural yoghurt, and putting in the refrigerator overnight. I sometimes add cucumber before refrigerating it.
